Onions. Whether you choose white, yellow, red, or green onions, they add a delicious depth of flavor. Onions can be sharp or sweet, depending on preparation. They’re packed with vitamin C and other antioxidants, making them a flavorful and nutritious addition.

Ingredients:
1 ¾ cups egg whites
1 cup cottage cheese (4% milkfat)
Salt and pepper to taste
½ cup onions, chopped
⅔ cup green pepper, chopped
½ cup cooked bacon, chopped
⅓ cup cheddar cheese, shredded
Instructions:
Set one oven rack in the middle position and another in the lowest position. Preheat oven to 325 °F.
Fill a 9x13-inch metal or ceramic baking dish halfway with boiling water, then place it on the lower oven rack. (This will create steam in the oven, giving the egg bites a custardy texture.)
Spray the muffin pan generously with nonstick cooking spray.
Cook bacon over medium-high heat until fat crystallizes and bacon is crisp (three to four minutes per side). Transfer bacon to a paper towel-lined plate; reserve bacon fat in a skillet.
Add onions and green pepper to skillet and saute until onions are translucent. Set aside to cool.
Once cooled, chop bacon into small pieces.
In a blender, combine egg whites, cottage cheese, salt, and pepper. Blend until completely smooth (30 seconds to one minute).
Pour the egg mixture evenly into the prepared muffin tray, filling each well to the top. Scoop an equal amount of the onion and green pepper mixture, bacon bits, and shredded cheese into each cup. Mix well with a spoon.
Bake for 20 to 25 minutes on the middle rack until the eggs are set. (You’ll know they’re done when the egg bites start to pull away slightly from the edges and puff up.)
Remove egg bites from the oven and let them rest in the pan for about five minutes.
